I made stewed plums and they are fucking delicious!

I had a pint of Italian plums (the ones they make prunes from) which I got from the farmer’s market last weekend. I’ve been poor at time management in the mornings and not getting time to cut them up to take with lunch. They were starting to get a little soft, and I prefer fruit to be firm/crisp.

So I stewed them! Sliced them in half, removed the pits, simmered them in a little water and a packet of stevia for about 20 mins and then mashed them down with a potato masher. Yes, I know it’s weird to mash them, but I wanted them for mixing into overnight oats.

SO SWEET AND TANGY AND FLAVORFUL HOLY CRAP

Gonna make overnight oats with yogurt and stewed plums and maybe some crushed pecans. I shelled those jerks yesterday, I might as well use them, too!
