Aka supper and/or o/t post, I guess!

I just spent the afternoon cooking enough to feed us till Thursday so I don’t have to do much during the week after work. Tonight’s (and probably tomorrow’s) dinner: pork belly, roasted cauliflower with curry and cumin, and fresh rosemary sourdough bread (with oil and vinegar on the side).

I also made a big batch of butternut squash pasta and a salad for other lunches/dinners.

(I’ll bake it and get the cheese all gooey before eating)

Not only that, but I even made a jar of pesto with some leftover basil that I bought for Friday’s Thai coconut basil soup.

It is very clear why I will never be skinny.
