Mostly I made this as an excuse to show off the steak I made that my brother described as B-E-A-U-T-I-F-U-L! It’s a flat iron steak I bought on sale at the grocery store and marinated in a mix of grapeseed oil, white vinegar, chili powder, garlic powder, lime juice, and soy sauce for 24 hours (was supposed to be 3, then I decided I had to have spaghetti last night instead). I cooked it in a hot cast iron skillet for about 3 minutes on each side, then put in a 350° oven for another 5. It is one of the best steaks I have ever made, so perfect and tender. At the thicker end it is maybe just a teeny tiny bit undercooked for my tastes, but that just means I can reheat it a little without it overcooking.

I served it with roasted bell peppers and onions in warm flour tortillas.
