Hi, GT! Continuing on my journey through my pantry tonight, I made chili. For kid’s snack this afternoon, I dug out a bag of frozen blueberries and made blueberry-cranberry cornbread donuts with an orange glaze. Hey, having to use only what we have on hand is really forcing the creativity!
For the chili, I grabbed cans of: tomato sauce, diced tomatoes with chili seasoning, corn, black beans, pink beans, pinto beans, and chipotles in adobo. From the fridge I got picante sauce and the (very small amount!) of leftover BBQ pork. Add in a chopped onion, sriracha, chili powder, garlic and chile seasoning, and... I dunno, a bunch of other spices and bits of sauces and stuff. It was SPICY! Really good, though. Everybody loved it, except Picky Patty (aka OldestSmacks, who’s favourite comment lately is “ew, that’s gross” about EVERYthing I make).
While I was digging around and trying to figure out dinner, I found a sandwich baggie full of wild blueberries in the freezer. That set the wheels turning, and I thought, “Hmmm... the sweet cornbread donuts I made yesterday disappeared in a hot minute, what can I do with this...?” Cornbread donuts with bits of cranberry jelly and tiny blueberries in the donut and an orange glaze on top, that’s what I could do with that! They were damn tasty, if I do say so myself! And again, they just vanished. I managed to get a picture this time, I’ll post it in the comments.
