Hey, GT, how’s it going? Wanna come talk about food? What’d youall have for dinner tonight?

First thing I made were these fabulous pork chops. I had a pack of 4 large, boneless chops, so I fried a chopped onion in some oil, then seared the chops on both sides. I scooped up the chopped onion on top of the meat, then spread a big spoonful of my homemade smoky ketchup over that. That pan then went into the oven. I flipped the meat a couple times while it cooked to get that sauce all over them.

I was trying to use up leftovers before they get lost in my fridge, so I made a bagful of leftover rice into fried rice with carrots, onion, and garlic. Also, a wee bit of Worcestershire, a shake of hot sauce, and a small spoonful of the smoky ketchup. The rice was GF/DF. For those who can eat such things, there was also a bag of leftover plain spaghetti noodles to have instead of the rice.

I pulled the chops out and sliced them up in bite sized pieces. Added more ketchup, water, dehydrated onions, and a spoonful of brown sugar to the pan juices, and let that simmer for a few. Toss the pieces of pork back into the sauce, heat it all together, and then... then, you have a really good BBQ pork topping for your rice or noodles!
