I’m all pleased with myself because dinner was awesome, with very little effort.

I picked up a 4 pound pork roast on sale the other day ($2 a pound!), so that was the main course. I had a bunch of errands to do, so I figured I’d put it in the oven, nice and low, and by the time I got back dinner would be done.

I put it in a baking pan, draped bacon slices over the top, surrounded it with whole mushrooms, dusted the whole thing with salt, pepper, garlic powder, and onion powder, poured a small can of tomato sauce around the meat, covered it with tented foil, and let it cook at 300F for about 2.5 hours. It was perfect. And the house smelled fantastic!

Sides were brown rice (I love my rice cooker) and canned green beans, with canned peaches for dessert.
