One of the many nice things about having Husband here is that I can cook for someone who appreciates it! He doesn’t cook much more than grilled cheese and scrambled eggs, so he enthusiastically eats pretty much anything I make for him.

Yesterday, my housemate and I went shopping and got lots of discount fresh veggies at Meijer. Got a couple of big mixed veggie trays for $5 each, pre-sliced peppers and squash for $1, and loads of other stuff. Had chicken in the fridge, that case of tortillas we acquired the other day, and those sliced peppers...

...so, naturally, dinner tonight was chicken fajitas (sort of)! Deeeelicious. I didn’t do anything fancy with them, just peppers, onions, garlic, and mushrooms (not traditional, but we like ‘em) stir-fried with strips of chicken and a bunch of seasonings. Brown rice, sour cream, cheese, and salsa for sides/toppings and, of course, tortillas.

Hubs is tucking into a couple of fajitas (more like burritos, I suppose) right now, making appreciative noises.
