I was still hungry after dinner and craving sweets, but I don't care enough to actually bake banana bread like I need to (because I have old bananas waiting in my freezer). Instead, I found a box of pistachio pudding mix that I've had for a while.

Pudding sounded both delicious and quick, so I got down to making it. Unfortunately, I only have almond milk this week, so I figure, what the heck? Almond milk pistachio pudding it is!

But I didn't look online to see if I needed to change the proportions, so instead I ended up with pistachio pudding soup, which tastes delicious but is not what I was hoping for. I've put it in the freezer in disposable cups, so maybe it will end up being some delicious popsicle-like thing!
