A bit early for dinner for some, but I just had a yummy late snack and after a week of failing at providing adequate food for myself, I feel both satisfied and successful. So what are you eating or planning on eating?
I just had Brussels paté on wholemeal spelt crackers with rosemary, green olives with chili pepper, and grilled haloumi.
Lunch was chicken breast and Spanish chorizo in a roasted garlic, tomato, onion and paprika sauce with zucchini. Dinner was a chocolatey berry smoothie.
I just started making crackers and don’t know why I waited so long. (Actually, I do. I’ve been too tired to cook. And, I was balking at the rolling out. But I decided to roll the dough between two pieces of parchment paper, and it was completely no fuss.) The next new food experiment I have on the list is trying using quark to make a lower fat spinach and artichoke dip.
