Help me, GT. Help me.

Basically, what it comes down to is this: There's a double birthday event in my office later this week. Normally, when someone has a birthday, we do a lunch potluck. But, this time around, it's going to be a brunch potluck a couple of hours earlier.

I have no idea what to do for this. I don't do brunch. I did brunch once, and all I really remember are mimosas. And since I work in public education, this isn't the type of workplace where I can bring in mimosa ingredients and call it good.

So, what I can do that will require the minimum amount of effort and be called brunch-ish, that I could possibly make the night before, beyond running a box of Eggos through the kitchenette toaster?

ETA: Extra challenge: Bonus points if your suggestion is gluten-free. Not for trendy diet reasons; one of my co-workers has celiac disease and we all try our best to be inclusive.
