Have we had a food post lately? I feel like we need one. It’s “winter” here in the Deep South (I had to wear socks today!) so I just feel like making nice one-pot meals. Who am I kidding, that’s all I make for dinner all year.
Anyway, I have a pack of boneless/skinless chicken thighs defrosting and need ideas for what to do with them. I had bought them thinking chicken and rice, but I made moroccan cauliflower and chickpeas on rice last night, so I want something that will be good on pasta as I have a couple boxes of veggie pasta to use up. Or something that requires no accompaniment, like this one with fresh peas and sparkling wine (do you drink it or cook with it? Not sure!)
Tell me what to eat please! Chicken thigh recipes appreciated but so are recipes or recommendations for anything delicious. What good things have you put in your mouth lately?
