Tonight’s dinner was supposed to be chicken massaman. We have the jasmine rice and the good curry paste(Maesri. It is soo tasty!) and the tamarind and the coconut milk and the etc etc etc. It was going to be baller as hell. We get home, no one took the chicken out of the freezer to thaw.
So instead I am using the frozen beef meatballs I mad a couple of weeks ago. I don’t spice my meatballs too heavily so that I can use them quick in a vareity of situations, and I figured they had worked out well in the Vietnamese meatball soup I attempted a while back, so I went with it. Fingers crossed.
