I’m trying to start doing the weekly meal plan thing, and I’m getting quickly overwhelmed. I want to start slow and easy with a few simple vegetarian or vegan meals that I can make relatively quickly and get a few servings out of. Bonus points for things that keep well in the fridge, don’t require a lot of expensive/exotic ingredients and don’t rely too heavily on dairy or eggs.

Anyone have suggestions for recipes that would fit the bill? I don’t need website recs — I’m already going through a bunch of them. I’m just hoping for a few favorite, tried-and-true recipes to get me started.
