I’m currently finalizing and buying last minute ingredients for our Christmas Eve and Christmas Day meals. What’s on the menu at your place?
For Christmas Eve, we’ll probably just do a normal breakfast and lunch, but for dinner we always do the same meal from my husband’s family traditions - Kotbullar (Swedish meatballs) with mashed potatoes and lingonberry jam. My husband will be making this one. We didn’t cook it last year, since we were visiting family, but we’re looking forward to bringing it back. For dessert, I’ll be making red velvet cream cheese brownies, and we still have some Christmas cookies my oldest decorated sitting around, too.
For Christmas dinner, I will be doing a roast beef, potatoes gratin (I’m regretting this one already because of all the peeling and slicing), some roasted vegetables with balsamic and honey, and some store-bought rolls I will probably pick up from the store tomorrow. Dessert will be chocolate chip bread pudding with an optional cinnamon rum sauce for the grown-ups.
What I’m still trying to decide is the breakfast for Christmas day. I have some frozen cinnamon rolls I was thinking of, but now I’m considering bumping those to Christmas Eve and trying to do a make-ahead breakfast casserole for Christmas day - maybe something like this slow cooker breakfast casserole, since my husband and I will likely be up late already wrapping presents last minute (we’re terrible about that).
For New Year’s I think we’re going to be lazy and get take-out Indian food, and just relax at home. Maybe we’ll do french toast or something for New Year’s Day.
Anyway, what are your holiday menus looking like? We’re keeping things relatively small, because we’re not hosting family, but I know a lot of you guys are having large groups for the holidays. Are you panicking? Or did you all start prepping two weeks ago, like pros? Oh, and Happy Holidays to everyone!
