My dinner tonight was a bit of an experiment, but I've got some stuff I needed to clear out of my fridge. So, I shredded half a large fennel bulb, sauteed it with sliced hot Italian sausage until it was soft, and then served it over mashed cauliflower. The mix of flavors borders on being almost too much. But, it managed to stay on this side of delicious.
So, what did you have for dinner? And does anybody have any ideas on how to use the rest of my 1 1/2 fennel bulbs? I'm thinking roasting at least the other half, but am open to ideas.
