I just made up a soup recipe using some produce I had that was going to go bad! The only thing I had to buy was a bag of frozen corn.

2 tbsp butter

15 oz bag frozen corn

1/2 large onion, diced

1/2 large apple, diced

15 oz chicken or veggie stock

2 Yukon Gold potatoes, cubed

2 large stalks celery, sliced

1 tsp dried oregano

1/2 lemon

fresh basil cut into ribbons

parmesan to taste

Melt butter in a stock pot. Saute the apple, onion, and 1/2 the bag of corn until onions are translucent. Add the stock and bring to a boil. Remove from heat and ladle into a blender. Using the liquify setting, blend until smooth. Pour back into the pot and toss in the other 1/2 of the corn, the celery, the potatoes, and the oregano. Add salt & pepper to taste. Bring to a simmer and cook until the potatoes are tender. (I thought mine needed a little brightness, so I added a squeeze of lemon juice at this point.) Ladle into bowls and top with basil ribbons and parmesan.

Would be amazing if I had some bacon - I'd render some diced bacon first, then cook the apple and onion in the bacon fat & top the soup with some bacon. Also, I accidentally bought that gross corn with the butter sauce on it, so don't do that.
