Welcome To The Bitchery

And I cheated. I used a gluten free vanilla cake mix. But holy crap you'd never know these were gluten free.

I used a Bobs Red Mill mix because measuring out all those different flours is hard and I am lazy. I threw in some cinnamon and nutmeg and a little extra vanilla so I could feel like I made it myself. But the texture is perfect. I'm almost afraid the regular muffins I'm going to make next won't stand up to these ones. The batter was thick and gooey, though it turned a little blue because I was using frozen berries. But even blue muffins are okay.


I also topped them with vanilla sugar, brown sugar, cinnamon and nutmeg. They are delicious and I'm almost sad I didn't make them completely myself.

Here's to hoping the regular batch comes out as good.
