What are your favorite vegetarian meals and recipes? I know the nutrition stuff, just get me excited about sticking to this.

Helpful Info: I should mention that I was a vegetarian from the age of 12-20, but was probably malnourished. We like vegetables and beans. I do not like rice and pasta very much. (I am a freak.) I am open to fake-meat recommendations, since I have not had it for 11 years.
