Though I've bounced around between vegetarian/pescatarian/mostly-vegetarian for most of my adult life, I never felt better than when I was vegan for a little over a year in college. I'd like to get back into it, but right now I'm looking for vegan breakfast options.

Right now I make baked pumpkin oatmeal (not vegan) on Sunday and portion it out for my breakfast M-F. I really like it, and I don't think it'd be hard to make vegan, but it gives me a headache, and I'm thinking it's either the sugar in it or the gajillion carbs or both.

Do you have any suggestions for easy to make, easily portioned for the week, higher-protein vegan breakfast options?

ETA: Holy crap. I went away for a few hours and got tons of great responses! Thanks to everyone for the suggestions; I will be going through each one and testing out many, if not all of them, soon enough!
