I would like to be able to make blueberry muffins once in a while, but because I apparently have NO willpower, I would like to bake them one at a time ( I have seriously even gnawed on frozen ones). The recipe I have calls for one egg and makes six muffins. What measurement can I use for 1/6 of an egg? I found websites that say one egg is 3 1/4 tablespoons. Is there a good substitute for eggs for baking?
