I know I’m not the only one! What are you baking lately? Even if it’s just yourself (legal states, just know I am so jealous right now!), come set a spell and tell me all about it.

When I got home from my sister’s tonight, Other-Husband made dinner, and I got to lay down and read for a bit. My Bestie skyped in after dinner and I wandered in to the kitchen while we were talking. I made a big pan of beef broth and tomato brown rice for tomorrow and thought, hmm... there’s room in the oven for another pan... so I started making a tropical fruit cake.

(I apologize in advance for lack of measurements... I find gf baking forgiving enough to just add a bit of this and that and see what happens. It usually turns out well!)

I started with a gf yellow cake mix, added almond flour, ground flaxseed, brown sugar, white sugar, and pumpkin pie spice. An extra dash of salt and baking powder to compensate for the extra flour, and I set that aside. Then, pineapple juice, coconut milk, a shot of rum, a splash of vanilla, a couple eggs, and a splash of olive oil. After I mixed all that together and added it to the dry ingredients, I added the drained can of crushed pineapple.

It. Smelled. So. Good. while it was baking, and it tastes fantastic. I was going to make a coconut milk frosting to go on it, but I don’t think the kids left enough to bother frosting, so I’ll have to try that next time!

And in the morning, I’m making cocoa-coconut waffles! Gotta use up that can of coconut milk, somehow ;)

Oh, and I inspired Bestie, and she was making a spiced pear loaf cake while we were talking.
