My Mom's side of the family has a get together on Boxing Day, and as always, I have been given salad duty. So have at least 3 other adult cousins, so I try to mix it up a bit.
This is my contribution for this year. I've been making it up as I go along. It's based quite loosely on Mollie Katzen's Wild and Basmati Rice pilaf, only turns out I didn't have a enough basmati rice, so it's mostly "Rice of the Prairies", which is a special kind of oats. I roasted up three delecata squashes with rosemary, mixed some fresh sage into the rice while it was in the oven, and mixed minced preserved lemon and garlic into the rice when it came out of the oven. I've also put in dried cranberries and toasted pecans.
Not entirely certain what to do with the dressing. I've decided on cider vinegar and maple syrup and olive oil, to which I have added more Rosemary and Sage. Don't know if it needs anything else.
I also plan on going out and getting some green onions, and possibly some sort of hearty green to add as well.
Any thoughts? We have to leave for my uncle's place in about an hour.
