I was gifted with a beautiful wheel of brie a while ago (as well as other goodies like chocolate and red wine) for watching my sweet little niece when she was sick for several days. I wanted to do something special with it and promptly forgot it in my fridge.

Well, it’s best before date is in a few days, and while I know it will keep longer, I feel I should just eat it. I want to do a baked brie, but I’ve never made one and not sure what to do with it, really. Most of the recipes I’ve seen are quite sweet, and while I don’t mind sweetness I don’t want it to be a dessert; I tend to like savoury snacks. It also doesn’t need to be fancy since it’s just for me and two friends. I was thinking of topping it with fried mushrooms or something, but I don’t know what I’m doing. So groupthink, what do I do with this brie?
