I just made one of my best recipes ever, a one-pot chicken dish with potatoes, eggplant, and a fresh tomato sauce. I was a little daunted by the idea of making a sauce out of fresh tomatoes. I wasn’t sure if I had enough to really get a good tomato sauce, so I made a few changes to the recipe (I know, I know). I added some tomato paste and some water just in case, and it was a good move. I also reversed the order of the cooking of the sauce and the chicken, because I didn’t really want to blend the sauce. So I cooked the chicken and potatoes first, set them aside, then started on the sauce. The sauce seemed a a tad under-seasoned, so I also added some paprika, turmeric, and cayenne for a deeper Spanish flavor (the cayenne in particular really helped!). It was one of the first times I got really creative with my changes to a recipe. Usually I just adapt a few things to make up for a lack of a specific ingredient or tool. Dinner was served with a ciabatta roll on the side, and it was delicious! What did you have for dinner today, GT?
