Can we get a recipe thread going?

Post a recipe that you have done recently and were excited about!

I am on a zoodle kick. I take 4 zucchinis and I cut off both ends. I take a vegetable peeler and peel long noodle like strips. I boil salted water and put about one to two ounce serving of pasta. Then during the last 3 minutes of boiling the pasta, I add the zoodles. I drain it all in a colander and add a pasta sauce. I always make mine fresh because I hate the additives in shelf stable pasta sauce. It tastes really delicious and it is super filling and good for you.
