ETA: game over. I will be having hash with a poached or fried egg and biscuit on the side or possibly baked over the hash.

The challenge: I am craving biscuits. I do not any meat in the house but have a reasonably stocked pantry. I have the following veggies. What should I have or dinner?

I had salad for lunch is out. I'm leaning toward omelette and biscuits but am only meh on it.
