What did you have for dinner? I love hearing about everyone's culinary adventures!

I made chicken veggie soup and GF/DF cornbread. I tossed the soup together with the broth I made from the carcass and drippings of the roast chicken from the other night. Skimmed most of the fat off, and added: 2 small potatoes, cubed; 1 onion, cut in chunks; 1 rather sad sweet potato, cubed; 3 cloves garlic, halved and thinly sliced; 1 very large carrot, quartered and thinly sliced; 8 mushrooms, quartered; 2 handfuls dried corn kernels; 2 handfuls dried spinach; and a small handful of dried celery. There were also a bunch of herbs and spices that I dumped in, but I don't remember what!

The cornbread always seems to come out terribly dry. It tastes good, and the texture is good, but it's dryyyy. I used oat flour this time, instead of a GF flour blend, and I added in some canned pumpkin, ground flax, and an extra egg, and it's still dry. Suggestions, anyone?
