I’ve been craving sweet potato lately and the weather is cooler today (still unseasonably warm by 10-15°, but a little better), so when I saw this Sweet Potato Tortilla Soup, I knew I had to make it for dinner. The only problem is I’d really like to make it in the slow cooker, but I’m not sure the best way to do it.

I could just dump everything in a pot, and it might work out okay. But, I feel like it might be missing something from not getting sauteed.

I’m thinking maybe I could add the sweet potato, corn, tomatoes, and some chicken broth and let that slow cook all day. And, then an hour or so before I plan to eat, do the spices and masa and all that and just add it to the slow cooker. But, if I do all that, I might as well just make the recipe as is...which is probably what I’ll end up doing.

Any thoughts for me? Planning anything good for lunch or dinner tonight? Lunch is probably just going to be the second half of the Panera at Home broccoli cheese soup I bought the other day (yeah, I like soup enough to eat it twice in one day....)
