Cooking for One

The worst part about living alone is cooking alone. I eat a lot of sandwiches, mac&cheese, frozen meals, leftovers, cereal, etc. because of this.

But tonight I'm feeling FANCY.

I'm in the middle of cooking a single stuffed bell pepper for dinner.

Ingredients:

  • 4 slices center-cut bacon
  • a handful of white mushrooms, sliced
  • one red bell pepper
  • one cheap packet of that really easy flavored rice
  • one can corn
  • Worcestershire sauce, leftover red wine

I cooked the bacon almost all the way and removed it. While it was cooking, I sliced the mushrooms. Then I cooked the mushrooms in the bacon grease with a few splashes of red wine and Worcestershire sauce. When the mushrooms were reduced to half their size, I added the now-torn up bacon with more wine and sauce. Then I added about half the can of corn. Following the directions on the rice packet, I added 1 3/4 cup of water and the contents of the rice package, brought it all to a boil, and then reduced the heat. It's now simmering for ten minutes.

Meanwhile, my oven is preheating to 350 degrees. When the mixture is done simmering, and enough of the water is absorbed (if not, I'll let it sit longer), I will spoon as much fits into my bell pepper with the top cut off and the inside cleaned out. Then I will put it in a baking dish and bake the whole thing for 15-20 minutes. Hopefully, it will be delicious. We will see.

I've been cooking for 20 minutes already, and I will not eat for at least another 20 minutes. This is why I usually don't cook nice things for myself.
