Cooking Questions OT

I’m so frustrated. I’ve had my bread machine for a few years now and use it not often, but regularly. About 99% of the time, my bread deflates! I check it halfway-ish through and it looks so well-risen and delicious, but by the time it’s done, it’s lost about 1/4 of it’s size because the top sinks in. What is going wrong?? I use the recipes that came with the bread machine, with the exception of sometimes subbing 1/4-1/2 of the white flour with wheat. It always tastes good and has a nice consistency, but it deflates almost every time. I just made some this afternoon to go with dinner and ... deflated. Delicious, but deflated. Help!

Disclaimer: I don’t bake at all with the exception of quick bread (like banana or pumpking), muffins, and bread from the bread machine.
