Cool Weather Recipe Favorites

Admittedly it’s still freaking hot here, but hope springs eternal that at some point soon I can make cool weather foods.

Currently I am making applesauce with some withered apples I found in the fridge, and it smells amazing.

One of my favorite cool/cold weather recipes is to roughly cut up red onion, fennel, celery, carrots, and sometimes squash, toss with olive oil, pepper, salt, and coriander, and then dump on a baking sheet and bake at 375 degrees. About 20 mins in, I dump a bag of thawed frozen butter beans or rinsed great northern beans in there to roast with everything for about another 20-25 mins.
