I have been encouraged to post a recipe, but I don't measure. So. Let's see if I can do this.
5 or 6 White Nectarines. Why white? Because they detach from the pit more easily than yellow.
~1/4 cup brown sugar
~1/4 cup white sugar
~1/2 tsp salt.
Cut the nectarines in half, detaching the pit from the pitted side. In a bowl, toss all the ingredients together. Leave in fridge overnight, to macerate. Next day, drain the peaches, saving the syrup for drinks.* Grill the peaches for...five minutes? Until there are golden brown lines on them. Place in a bowl with really good vanilla or chocolate ice cream. Grate a nutmeg over them. Shove in your facehole.
*I recommend adding the syrup to a Dark and Stormy. Or water infused with lemon and ginger for a nonalcoholic version.
