I promised redpanda this recipe, and enough people starred my summarized recipe that I thought I’d post it. I got it from a magazine like “Cottage Life” about 20 years ago, and it’s one of my go-to recipes for potlucks. Makes 8 cups. 2 cups/500 ml small pasta (bow ties, rotini, whatever) cook as per package instructions

1/2 lb /250 grams fresh asparagus, cooked in boiling water for about 4 minutes, or your preference (I’ve used snow peas too, so it’s flexible as to vegetables)

1/2 cup /125 ml chopped green onions

1/2 cup /125 ml chopped celery

2 cans salmon (7.5 oz. or 213 grams roughly). You could use fresh, or try smoked salmon

Lemon wedges and dill sprigs

DRESSING

1/4 cup plain yogurt

2 tbsp mayonaise (light, Hellman’s, Miracle Whip, homemade, whatever; your preference)

1 tbsp lemon (or lime) juice

1 clove garlic, minced (not a bulb, mind you, just 1 clove)

2 tbsp chopped fresh dill (I have used dried too)

Salt and pepper to taste.
