Is/was your Sunday night dinner a "screw it, it's a day of rest" dinner o f delivery pizza and wine? Or was it a homecooked dinner with the intention of leftovers for the week (like mine)?

Inspired by Snaktivist sharing this recipe for Tomato-Glazed Meatloaves with Brown Butter Mashed Potatoes, I made them for dinner. Now, all mashed potatoes that aren't made with brown butter and buttermilk will be a disappointment. The meatloaf turned out pretty well, it actually held together, which doesn't always happen for me. I didn't have celery or carrots and didn't feel like going to the store to get some, so it only had onions and garlic, and I added extra tomato paste so I didn't just have a couple tablespoons sitting around. The glaze is really, really good, next time I'm probably make more. And now, I have 8 little meatloaves leftover for the week. I'll probably either freeze a couple or give them to ManBerry, haven't decided yet.
