I made salmon patties (recipe follows) and green beans. They were damn tasty! What’d you have? Tell me, tell me!

For the salmon patties (makes about 20):

2 cans salmon, broken up and bones picked out (I only pull out the round ones, the other little ones get blended in)

2 eggs

1/2 cup + 2 TBS fine ground cornmeal

2 TBS dry minced onion

In a large bowl, using a fork, mix all ingredients together thoroughly. Spoon heaping tablespoons of the mix into a hot, oiled skillet (I used olive oil) and pat down into small rounds. Fry 2-4 minutes, flip, and fry another 2-3 minutes until golden brown on both sides. Put on paper towels for a minute to absorb any excess oil. Then... devour!
