Continuing with yesterday’s creative theme of “what can I make with what’s on hand?”, dinner tonight was chicken-bacon-ranch pasta.

GF pasta, frozen peas and carrots, freeze dried sweet corn (plumps up beautifully when you soak it), bacon bits (not those horrible fakey crunchy things), canned chicken, and shredded manchego cheese. Tossed that all together, dumped in a couple tablespoons of Tofutti sour cream, a squirt of sriracha, and some of that weird and wonderful everything-free ranch dressing. Walden Farms, I think is the brand. It’s some kind of food magic, because they make a bunch of nothing taste pretty good.
