I’ve currently got a big pot of jambalaya going, from this recipe:
Fairly simple and really good. I use chicken and chicken-based andouille sausage because I’m weird about pork and gulf-area shrimp kind of sucks so I omit it. Also, I threw in a few serrano peppers and extra cajun seasoning because I love all things spicy, and food doesn’t taste good to me unless it seems like it’s based on a dare. I’m about to be on my second glass of sauvignon blanc. I also have some cornbread to eat and some zucchini that I could sauté, but I think I might be good with just jambalaya. We will see. I haz a big lazy tonight.
