I haven’t been cooking much lately since we’ve been going crazy with all this moving stuff and it’s been miserably hot, anyway. Today was nice, so the kitchen wasn’t like the doorstep of Hell, and I figured I’d make a real dinner!
Last night, I was watching Create channel (public television... you may or may not be able to find it), and this show called Patty’s Mexican Table was on. I’m a big fan of Mexican food, and I love this chef because she is just so fun to watch! She made a chicken and rice dish, and I was inspired :)
Dinner tonight was Mexican rice bowls with taco meat and black beans. I’m pretty pleased with myself because I rarely make rice on the stove and, for once, it came out beautifully! I had to work with what I had on hand, so I changed it up quite a bit from the original, but it was delicious.
Brown minute rice, sautéed in coconut oil, with chopped onion, canned green chilies, jarred minced roasted garlic, a quart of homecanned red and yellow tomatoes with juice, extra water, and a ton of spices including cinnamon, clove, chile and garlic seasoning, cayenne, cumin, turmeric... basically, a little of everything!
Covered the skillet with a pizza pan (there is a lid, I swear... I just have no idea where my son put it), and left it alone for about 10 minutes, stirred, then left it alone again for another 10 minutes.
While that cooked, I also made taco filling with a pound of ground meat, a can of black beans, a cup of salsa, and 2 packets of taco seasoning.
Everyone got a pile of rice, topped with shredded cheddar cheese, taco filling, salsa, and sour cream (almond milk “chedda’ cheese” and Tofutti sour cream for the gf/df kids!) Some of the kids used tortilla chips to scoop it up instead of spoons!
