We haven’t had one for awhile, so, c’mon in and tell us what’s for dinner!
It was my turn to make dinner tonight. I made meatballs with veggies in gravy over brown rice.
I had a pound of ground beef and a pound of ground buffalo. I used gf bread crumbs (made from the toasted heels of the gf bread) and cornmeal, a couple eggs, some dried minced onion, Peccorino Romano cheese, Worcestershire, garlic salt, and dried thyme. Made about 40 meatballs and baked them.
I made the veggie gravy to go over them. I fried diced onions, celery, carrots, banana pepper, and eggplant in garlic oil, minced a jalapeño and added that. A splash of Worcestershire, 1/4 cup sweet red wine, 1/2 cup water, 1/2 cup of tomato sauce, 2 1/2 cups beef broth, some thyme, turmeric, paprika, and garlic powder. Simmer all that together until the meatballs are done. Thicken with cornstarch until it reaches a decent gravy consistency.
It was really, really good. All the kids ate it and most of them went back for more (surprising, because my nieces are usually quite picky!)
