Housemate made a gluten and dairy free cream of mushroom soup for dinner tonight. It was delicious! She used a gf flour blend for the thickener. It could easily be made vegan by subbing mushroom broth for the chicken broth. We added some garlic salt and a splash of Worcestershire sauce (soy sauce would work, too) to deepen the flavour a bit.
