I have been really bad about home cooking lately and have been relying on sandwiches and ramen bowls and other simple things that don’t actually call for much cooking. I’m trying to get my cooking mojo back on track, and BabySmacks wants to learn more about cooking, so we have been trying some new stuff. I picked up a big pack of baby bok choy last time I went shopping, so we made that tonight! It’s not that I’ve never had it before, I’ve just never cooked it at home, so this was by way of an experiment.
We quartered the bok choy and cut the leaves off to add later. Started by sauteing a chopped onion in vegetable oil with a drizzle of sesame oil. Added some fish sauce, soy sauce, and minced garlic and hot chilis. Tossed in the quartered bok choy and cooked for a couple minutes. Removed that to a bowl, and added halved crimini mushrooms, the chopped leaves, and several cloves of roughly choppped garlic to the pan, along with a bit more oil and salt. When the leaves wilted, I added the bok choy back in and tossed everything together. Removed it to a bowl again, used the pan juices to make a gravy using a cornstarch slurry, and poured that over the veggies. Served over sticky rice. It was delicious!
