Brightersides’ comment in the OT made me suddenly realize the amount of junk food I’ve been eating. Between stress and sick kids, other people’s schedules and having company over, I don’t think I’ve had a vegetable* in 3 days. Pretty sure the 3 dehydrated carrot chunks in a ramen cup don’t really count! So, tonight, I cooked actual food.
I diced and sauteed a large carrot, a bell pepper, and a sweet onion. Then that went into a 13x9 pan on top of 3 cups uncooked brown rice that I had tossed with salt and olive oil. I browned a pound of ground turkey seasoned with poultry seasoning and 5 roughly chopped cloves of garlic. Added that and the juices from it to the pan, poured in 5 1/2 cups of boiling homemade turkey broth, covered the pan and popped it in the oven for an hour.
II’m so glad I learned how to make rice in the oven. It comes out so well and even I haven’t burned it yet (stovetop rice and I don’t get along!)
So, tell us... what did you have for dinner? I hope that, whatever it was, it was delicious! (There will be no shaming if it’s cheese puffs and Mountain Dew because that’s what I had for lunch.)
* I lied... there was a spoonful of salsa on my nachos last night!
