As always, I want to know what youall are eating, because I am a total food nerd. I'm so glad I'm not alone in this... I get so many good ideas from you guys! What's that? What did I make for dinner? Oh, it was just a little something...
I made baked chicken. One whole roasting chicken, plopped into my cast iron Dutch oven. I couldn't figure out what I wanted to do with it (besides not serve it raw), so I went digging around in my fridge. We have an unseemly number of condiments in there, so something had to be right...aha!
I found a container that had roughly 3 cups of spicy veggie soup that I made awhile back. So, I pureed the soup in the blender, added some lemon juice, a bit of olive oil, a dab of balsamic vinegar, chicken seasoning, oregano, cayenne, and garlic salt. Poured that over and around the chicken, added a dozen halved small potatoes, covered it, and let it bake at 300F for about 3 1/2 hours.
Y'all, it was amazing. The soup had cabbage, onion, tons of garlic, tomato, carrots, potatoes... basically everything vegetable I could find. The flavours from the pureed soup permeated the chicken and the potatoes, and the chicken was juicy and so tender... I am a genius! (Modest and unassuming, as well, obviously :D)
I also made a loaf of chili-garlic bread for those of us who can eat such things... rubbed a partially-sliced baguette with chili infused oil and garlic infused oil, topped with a clove of minced garlic, parmesan, and some shredded queso tucked into the slices. Rolled it up in foil and let it sit for a couple hours, then popped it in the oven with the chicken for the last 15 minutes. Spicy, garlic, cheesy, and delicious.
