I was wracking my brain trying to decide what to do with the two chicken breasts and buttload of green beans in my refrigerator. I finally decided to stir fry them with the last dregs of oyster sauce and hoisin also hanging out in there with a splash of chicken broth to thin it out. Steamed done white rice, made a few cups of egg drop soup, baked a couple frozen egg rolls. It was fantastic. I didn't think I had enough chicken to go around, which is why I made both soup and eggrolls, but we actually have leftovers. Suuuuper tasty. I am happy. Fairly light, healthy dinner tonight before tomorrow night's killer roast beef sandwiches.
