Veggies are finally starting to come in! I got fresh spinach and asparagus yesterday and I am stoked!
Going to make a pea and asparagus salad with a Meyer lemon vinaigrette. It’s going to be fucking awesome. I’m going to serve it on that fresh spinach with some lentils or chickpeas. Probably lentils, since I snack on hummus. Ohhh lentils will pick up that vinaigrette really well. Definitely lentils.
Also going to make a salad with corn, parsley, lima beans, tomatoes, and red onion.
And then I shall eat all the things all week. :)
What are the things you’re looking forward to making today/soon/at some point when things are ripe enough?
