so i was sitting here eating lunch and thinking about some of the stuff i love eating in the summer. with the heat, i like things that are light and crunchy, usually. stuff you don’t really need to heat up or make in a kitchen (bbq being the exception, of course!)
GT - what are your fave summer noms! i’ll list two of mine
the first is my mom’s summer salad she made when i was a kid. she’d chop up onions, cukes, tomatoes, and apples (green or jazz) and mix them all with a simple vinaigrette she’d make from scratch. i make it all the time, and now i make my vinaigrette with a little cajun spice for a nice kick. it’s soooooo good once it has chilled - it’s crunchy, a little tart from the apples, and so refreshing. easy, cheap, filling but not heavy. a summer fave in our home.
the other is my snack! so i am a big fan of crunchy, salty snacks. growing up my parents kept a lot of junk foods out of the house, so fresh veggies have always been my jam. my weakness is jalapeno chips though! a couple years ago, on whim we had some fresh green beans in the fridge. i rinsed them, halved them, and tossed them in a bag with cajun spice, extra garlic powder and onion powder, and a dash of olive oil. overnight, they get mixed up super well and they make a nice crunchy snack that satisfies my taste for spicy chips.
