I’m sitting here doing some menu planning and thought it’d be fun to hear what y’all are eating/thinking about eating. Anyone else menu planning? What’s on the docket?

I found this listicle today and pretty much everything on it looks SO. GOOD.:

Today, I had avocado toast with runny eggs for a late breakfast and tonight, I’m making a cheesy quinoa and brussels sprouts casserole for dinner. Yum!

I will almost definitely need to make quiche or something this week as it’s possible that I forgot that I bought eggs the other day and bought more today. I currently have 22 eggs sitting in my fridge. :D
