Question: what do you do with rhubarb? We are overrun! I made a 13x9 pan of strawberry rhubarb crumble last night... what else can I do with the stuff?

Yesterday, I went to the food pantry. I have only gone a few times in the 2 years since we moved here, but KidSmacks2 worked there for awhile over the winter, so they know us. Housemate had some unexpected expenses this last month, and while we weren’t going to starve, even my creativity was being taxed to come up with meals for 8 with what we had. Knowing it would be another full week before we could grocery shop sealed the deal.

We got an absolute AVALANCHE of food. A lot of it, not gonna lie, was straight up junk food. Giant cookies, danishes, bags of candy, a whole cake, a pile of those little 6 packs of “chocolate” covered donuts, a literal garbage bag full of various types of sweet bagels, and enough bread to last us for weeks (wrapped a lot of it up and tucked it in the freezer so it will last).

We also got lunchmeat, several small cartons of milk, ground pork, several cartons of berries, 18 eggs, a shopping bag full of fresh green beans, a bag of cauliflower florets, a handful of yogurts, and a boxful of premade sandwiches of varying types (the sort that you find in office vending machines... chicken salad, microwave cheeseburgers, burritos, turkey and cheese, etc.) There were also some pantry staples... 5 lbs rice, cans of beans, tuna, tomatoes, soup, chili, and various veggies, mac n cheese, crackers, and cereal.

Tonight, I made a casserole with rice cooked in chicken broth, ground pork, blanched green beans and cauliflower, and a box of GF/DF mushroom soup. Seasoned with paprika, garlic salt, dried minced onion, a little romano cheese, and some chives from the garden. Toss all that together in a casserole dish and heat til brown and bubbly. Delicious, filling, and even kind of healthy!
