I’m in a food mood. Come talk about foooooood. What’s for lunch? What’s for dinner? Have you had something especially delicious recently? Come talk about it! It’s eat-out-of-the-pantry week at the Smacks’ house, so I’m being creative again.
Last night was my GF/DF Tuna Casserole and corn on the cob (thanks, Almost-MIL!), and today I made Peach-Strawberry-Banana smoothies. I’m considering what to do for dinner, but it will probably be either pasta or chili, because I can do those entirely from canned stuff. Or I might just try something entirely different!
The tuna casserole is more properly a one-pot meal, since I just do it stovetop. I made a huge batch, and it was GONE. 2 bags gf penne pasta, 4 cans tuna, a bag of frozen peas, 1/3 - 1/2 cup mayo (can’t use cream soups, so had to substitute!), about the same amount of Peccorino Romano (sheep’s milk) cheese, garlic salt, paprika, and parsley. My kids LOVE it. The double batch makes 12 servings, and I barely got half a bowl!
Peach-Strawberry-Banana smoothies are exactly what they sound like. I used up the last of the bag of frozen strawberries, 2 cans of peaches canned in juice, and the last, very sad-looking, banana. Added about 1/4 cup of cane sugar because the peaches were kind of sour, and a bit of almond milk.
Our second to last day at Bestie’s house, O-H was elected to make dinner again because she and I gathered up EVERYTHING in her house that needed washing, and spent several hours at the laundromat washing, drying, sorting, folding, and getting rid of, clothes, towels, linens, etc. So, O-H was told that there was 2 pounds of hamburger in the fridge, and that the kids wanted chili. He ended up making this delicious chili-rice with the meat, onions, bell peppers, hot peppers, mushrooms, canned tomatoes, and tomato sauce, and a whole bunch of seasonings.
It dawned on me the other day that I’m so used to buying in huge packages and making food by the gallon, when the kids have all grown and gone, I’m going to have no idea how to cook for just us 3. I’m totally going to be that lady who feeds all the neighbours!
