I loved Edie’s food porn thread earlier, and I was inspired to make delicious (though not very pretty) food for dinner. Thought I’d come see what everyone else ate tonight!

I made homemade ramen bowls made with from-scratch pork broth and poached eggs. They were so good! For once, I got the balance juuust right in the broth, and didn’t over cook the rice ramen noodles (they turn mushy surprisingly quickly).

The broth was made from roasted pork neckbones, a splash of white vinegar, a couple of allspice berries, leeks, carrots, and garlic. That simmered all day yesterday, and then sat in the fridge overnight. Tonight, I skimmed the fat off and strained out all the stuff, then seasoned it with ginger and garlic paste, soy sauce, Worcestershire sauce, garlic salt, onion powder, salt, black pepper, and smoked paprika. Let that simmer on the lowest heat possible for about an hour.


For each bowl, I ladled about 2 cups of broth into a smaller pot and heated to just under boiling. Added the noodle block (you can get big packs of the rice ramen blocks at Costco), then the egg, and when the noodles just started to separate, I scooped them into the bowl and let the egg cook for another minute before pouring the egg and broth over the noodles. By the time it’s actually cool enough to eat, both the noodles and the egg were done perfectly!

It’s a damp and chilly night, and this really hit the spot :) Even better, it’s something everyone here likes! I’ve already been asked to make it again tomorrow...
